As repression Atemer Rickli or short Rickli (of Swiss German Rick "loop", "loop" or "loop") refers to a traditional Schaffhauser pastries, which is cooked in fat. The pastry got its name because of its special shape, which resembles a loop. It is part of Switzerland's culinary heritage .

Origin / history

Originally the Rickli come from Schleitheim (dial. Schlaate ), a municipality in the Swiss canton of Schaffhausen . That is why there is often talk of “Schlaatemer Rickli”.

Section from the Swiss map, Schleitheim is marked.

The Rickli was first mentioned in 1909 in the Swiss Idioticon , the dictionary of the Swiss German language. There it was defined as “a kind of cake made of narrow, mesh-like strips of dough baked in butter”. The Atlas of Swiss Folklore attests to the Rickli in Schaffhausen and Schleitheim shortly before the Second World War . “Schleitheimer Rickli” was mentioned for the first time in the 1927 cookbook “Schweizer Küchenspezialitäten”. In other places, fried baked goods were often made for Carnival, but in Schleitheim they were already available all year round as typical wedding baked goods, which explains the large quantities given in old cookbooks. At that time, for example, 30 eggs, four and a half kilos of flour, one and a half kilos of sugar and one kilo of butter were made into Rickli.

Even after the Second World War, Rickli was no longer just made for weddings. Rickli could also be found frequently at family or village festivals such as baptisms or confirmations.

In the 1990s a new custom emerged in Schleitheim and the surrounding area. The confirmands thanked for their presents with a bag of “Schlaatemer Rickli”. Since the art of rickli baking requires a lot of knowledge, time and patience, so-called rickli women often take over the baking. In every village there is usually a woman who makes her skills available to others.
