Floating island ( french Œufs à la neige ), Austria Schneenockerl with Kanarimilch (in Central Europe, "bird milk" in the local language) are a sweet made in milk cooked cams from egg whites and English cream or custard .

To prepare firmly beaten, sweetened is egg white spoonfuls of sweet in hot with vanilla flavored milk poached . After cooling, the dumplings are generously poured over with the sauce and served. It is customary to add a little more caramel syrup to refine it .

In the similar dessert Île flottante (French for "floating island"), a meringue mass is poached in larger portions or cooked briefly in a microwave oven and then cut into pieces and placed in a bed of English cream. For decoration, the dish is covered with caramel threads.
