Nocken or Nockerln , Italian gnocchi [ ˈɲɔkːi ] ( pronunciation ? / I , singular gnocco ), are egg-shaped or Spätzle-like shaped dough masses used in southern German and Alpine cuisine ; but they are also known in neighboring countries. The small dumplings or slices are made from a dough made from flour , semolina ( wheat or corn ), boiled potatoes , chestnut flour or other ingredients such as pumpkin , spinach and ricotta , which is usually bound with an egg . Herbs are also occasionally added. They are usually cooked in salt water and are often used as a soup or side dish . If they represent their own dish, they are often gratinated with cheese or, especially as gnocchi in Italian cuisine , as the first main course, similar to pasta . Audio file / audio sample
