The Ser koryciński swojski (German about 'homemade cheese from Korycin ') is a Polish raw milk cheese in a flattened spherical shape.

The cheese, which weighs 2.5 to 5 kg, is offered in three ages:

  • fresh (świeży) with two to four days of ripening
  • stored (leżakowany) with five to fourteen days of ripening and
  • ripe (dojrzały) with a longer ripening period

The color of the rind ranges from cream in the fresh to yellow in the mature Ser koryciński swojski, the cheese dough itself is from cream to light yellow. Its consistency ranges from evenly soft and wet with holes up to 1 mm in size on the fresh to yellow rind with a white coating, elastic dough and holes twice as big.

Its fat content ranges from at least 20% FiTr. with fresh and over 30% FiTr. with ripe cheese. The dry matter is between 47% and 57%.

It has been a protected geographical indication product since November 25, 2011 .

Manufacturer region

The region defined in the EU cheese regulation extends over three municipalities ( Korycin , Suchowola and Janów) in the Suchowola district in the Podlaskie Voivodeship . The area lies on the Białystok Ridge (Wysoczyzna Białostocka), which belongs to the macro-region of the North Podlaskie Plain (Nizina Północnopodlaska).
