Tschubritza

Summer savory

Tschubritza (also Tschubitza ) is the name for various condiments. In the Bulgarian language it is called summer savory . In German-speaking countries, it is the trade name for a spice mixture that is called Scharena Sol (colored salt) in Bulgaria . The name is derived from the savory, which determines the character of the mixture.

Typical ingredients in addition to savory are table salt and herbs ( basil , fenugreek , lovage , marjoram , lemon balm , mint , oregano , sage and thyme ), vegetables ( onion , garlic and celery ) and other spices such as paprika and glutamate .

It is considered the Bulgarian national spice , but is mainly used in the preparation of soups , ragouts and vegetable dishes.
