Snuten and Poten

Snuten un Poten ( Low German for 'Schnauzen und Pfoten') is the name of a North German dish in which the parts of pork that were placedin brine for preservation were originallyprocessed. Todothis, the cured meat is cooked for two to three hours with spices ( bay leaves , juniper berries and peppercorns ), removed from the bone andboiled foranother 45 minutes with sauerkraut . Mashed peas and hot mustard are traditionally served with the dish.

In the Land of Hadeln , Snuten and Poten are a variant of the turnip stew , in which, instead of smoked bacon, boiled sausage or ribs, pork paws and pointed bones are cooked with turnips, carrots and potatoes.

The Hamburg vocal duo Gebrüder Wolf sang Snuten un Poten together with other typical Hamburg dishes in a couplet of the same name , which was performed in the 1911/12 season as part of the revue Rund um die Alster and is still the most famous piece of the duo today.
