The Soumaintrain is a proven ancestry cheese , which in the department Aube or Yonne either pasteurized or raw cow's milk is produced.

With a fat content of 45%, it is creamy-soft, has a wrinkled, beige to slightly reddish rind and, depending on its maturity, a mild to strong taste.

During the two-month aging process, the Soumaintrain is washed several times with brine and Marc de Chablis.

The name of the cheese is derived from the municipality of Soumaintrain in the Yonne department.
