Bacon sauce

Bacon sauce is served with fish in north-west Germany , for example with herring or plaice .

For preparation, streaky and smoked bacon is diced and fried until crispy. The fried bacon is set aside and the fish is fried in hot bacon fat (as with the Finkenwerder plaice ).

A creamy sauce is cooked from the bacon fat with flour and onions . The fried bacon can be added back to the sauce.
