Starch sodium octenyl succinate

Starch sodium octenyl succinates are derivatives of starch that belong to the starch esters . This modified starch is used as a food additive and is labeled E 1450 .

Manufacturing

Starch sodium octenyl succinates are produced by reacting starch with technical grade octenyl succinic anhydride in a polymer-analogous reaction . Since not all hydroxyl groups react in this reaction , mixtures are formed with different degrees of substitution . However, the degree of esterification of this reaction is far lower than that of other starch derivatives. The degree of substitution of the individual starch components within a polymer can also vary. Three CAS numbers (66829-29-6, 70714-61-3 and 52906-93-1) are assigned to the E 1450, as both starch components that have a double bond in the C 8 substituent (shown schematically in the following figure) and those without a C = C double bond, i.e. with an octanyl radical, can arise:

However, E 1450 is commonly called starch sodium octenyl succinate.

application

E 1450 swells in cold water and acts as an emulsifier that stabilizes water / oil emulsions. It also forms stable, freeze-stable foams.
