Sushi Saito

Sushi Saito (Japanese 鮨 さ い と う) is a Japanese sushi restaurant in Tokyo. It has been awarded three Michelin stars.

The restaurant

Sushi Saito is located on the ground floor of the south tower of the Ark Hills in Minato . It has eight seats, all at the bar with a view of the chef's craftsmanship. There is also an additional private dining room with seven seats and its own bar. You enter the restaurant via the car park entrance. It does not have a guest toilet.

A branch is scheduled to open in April 2018 at the Four Seasons Hotel in Hong Kong .

The food

Chef Takashi Saito (born 1972, trained in Kyubei) makes sushi in the Edomae style. He buys his fish in the morning at the Tsukiji Fish Market . In an interview in the documentary Foodies - The Culinary Jetset (2014) he said that he was only a link in a chain that started with the fishermen. He must also do his best as he presents the achievements of these people.

According to Restaurant Magazine, he serves smaller pieces of fish than usual and his rice, made with mild red vinegar, contains a tad more salt. The magazine names the tuna o-toro nigiri as its best dish.

Lunch costs between ¥ 5,400-16,200, around 41-123 euros; a dinner costs ¥ 21,600, around 165 euros (as of 2018). The meal takes about 20 minutes.

Awards

Sushi Saito has been awarded three stars in the Michelin Guide since 2009. In 2017, it was ranked 26th on Restaurant Magazine's list of the 50 best restaurants in Asia.
