Teichlmauke

Teichlmauke

Teichlmauke , also Timplmauke or Titschlmauke , is an Upper Lusatian dish, which is particularly well known in the Upper Lusatian Bergland .

The dish consists of mashed potatoes (Upper Lusatian dialect: "Abernmauke" or just "Mauke" for short), boiled beef with lots of broth and sauerkraut . The whole thing is served on a deep plate. First the chopped meat is placed on top of this, the mashed potatoes come all around - so the Mauke - so that a hole remains in the middle. This hole is then filled with broth like a pond (belittled a "Teichl"). Finally, the sauerkraut is opened around the meat.

The secret lies in the preparation of the beef and the broth. Important ingredients are beef (preferably from the prime rib ), marrowbones , soup greens , bay leaf , salt and pepper .
