Telemea is a Romanian type of cheese made from sheep's milk , more rarely from cow or buffalo milk , which has matured in brine . It is comparable to the Greek feta , but is a little softer in consistency. The salt content can vary greatly depending on the production. The cheese is not only eaten with bread, but is also used to enrich numerous salads and side dishes. The fat content in relation to the dry matter (fat in dry matter / FiT) is usually 45 to 48 percent, if buffalo milk is used, up to 55 percent.

Telemea has been a protected product of Romanian origin since 2005, with the following types of cheese officially recognized:

In 2013, “Telemea de Ibăneşti” was applied for recognition as a protected designation of origin . The recognition took place in March 2016.
