Like his father, he was also a farmer and was elected as his successor in the elections of June 18, 1969 as a candidate for Fianna Fáil in the constituency of Kerry North for the first time as a member of the Dáil Éireann ( Teachta Dála ). After his re-election in the elections on February 28, 1973 , June 16, 1977 , June 11, 1981 , February 18, 1982 and November 24, 1982, he was a member until February 17, 1987 .

In the run-up to the resignation of Prime Minister ( Taoiseach ) Jack Lynch as chairman of Fianna Fáil, McEllistrim belonged to the so-called Gang of Five , together with Mark Killilea , Seán Doherty , Jackie Fahey and Albert Reynolds , who are to succeed Health Minister Charles J. Haughey as Lynchs Install successor. After Lynch's resignation on December 5, 1979, Haughey ran for the chairman election on December 7, 1979 against the previous Vice Prime Minister ( Tánaiste ) and Minister of Finance George Colley . Haughey finally won the election with just 44 to 38 votes and was then Lynch's successor as Prime Minister on December 11, 1979.

McEllistrim was then appointed by Prime Minister Haughey as Minister of State in the Treasury on December 13, 1979 and held this office until the end of Haughey's first term on June 30, 1981. After Haughey had formed his second government on March 9, 1982, McEllistrim was now Minister of State in the Ministry of Fisheries and Forestry and held this position until the end of Haughey's tenure on December 14, 1982.

In the elections of February 17, 1987 McEllistrim suffered a defeat and lost his seat in the Dáil Éireann. Then he was nominated on April 25, 1987 by Prime Minister Haughey as a member of the Senate ( Séanad Éireann ) and belonged to this until July 5, 1989. In the elections of June 15, 1989 , however, he ran again for a mandate in the House of Commons and until his defeat in the elections on November 25, 1992 again represented the constituency of Kerry North in the Dáil Éireann. In the elections on June 6, 1997 , he ran again in the constituency of Kerry North for re-entry into the House of Commons, but with 4036 votes only took fifth place with three seats to be allocated in this constituency.
