Thomas Pfannkuch (born February 21, 1970 in Kassel ) is a former German soccer player and current coach.

The defender began his career in the men's division at KSV Baunatal . In 1990 he moved to the Bundesliga for Borussia Mönchengladbach (1990/1991 season), where he only played one game. In 1991 Pfannkuch moved to the French Première Division (D1) at Olympique Lyon (1991/1992 season).

In 1992/93 he came back to Germany, he played for the second division club Eintracht Braunschweig (1992/1993 to 1998/1999 season) until 1999 and then moved to SSV Reutlingen for one season (1999/2000 season).

In 2000, Pfannkuch went to 1. SC Göttingen 05 (2000/2001 & 2001/2002 season) before taking up his last position as an active player at VfB Germania Halberstadt (2002/2003 to 2004/2005 season).

After the end of his career, he was head coach at Germania Halberstadt, having previously acted as player-coach since November 2004. On April 3, 2007, Pfannkuch was released from Germania Halberstadt.

For the 2007/08 season Thomas Pfannkuch came back to Eintracht Braunschweig, where he worked as a team manager. In the seasons 2008/2009 and 2009/2010 Pfannkuch was the club's youth coordinator and coach of the A-youth of Eintracht Braunschweig in the A-junior Bundesliga .

In 2014 Pfannkuch became the coach of the German CP national football team.
