The tiger bread ( Dutch : Tijgerbrood ) is a yeast bread from different types of flour. It comes from the Netherlands . It is also particularly popular in England under the name Dutch crunch or Tiger bread .

etymology

The tiger bread got its name from its cracked crust, which paradoxically is more reminiscent of a leopard skin .

Production and ingredients

The basic dough consists of wheat flour to which breadcrumbs soaked in water and dissolved yeast are added. Sugar and sesame oil are also added to the dough .

Before the dough has completely expanded, a porridge made of rice flour , boiling water, sugar and sesame oil is worked into the outer layer of dough . Since rice flour does not contain gluten , it does not expand and the typical cracks appear. The width of the cracks can be controlled by the thickness of the slurry.
