Tortas de Aceite (German: Olive Oil Tortas) are round, very thin and crispy baked goods that have been enjoyed for centuries, especially in Spain .

The true origin of the Tortas de Aceite is still unknown today. On the one hand there are versions that mention an Arabic recipe as the origin, and on the other hand there is talk of a sweet pastry in southern Spain. In the novella Guzmán de Alfarache by Mateo Alemán , the Torta de Aceite is mentioned as early as 1600. Even Miguel de Cervantes speaks in Don Quixote of "tortas".

The ingredients are wheat flour, virgin olive oil , sugar, salt, yeast, sesame seeds, anise and anise extract.

All data about the origins of olive oil tortas have one thing in common: they are called handmade "tortas" based on flour and sugar, which have developed over the centuries. The olive oil tortas are known worldwide today. There are now large factories in Spain in which the olive oil tortas are made more mechanically, but also small manufacturers who still add brown cane sugar by hand using the traditional manufacturing process.

The Spanish Institute for Foreign Trade (Instituto Español de Comercio Exterior; ICEX) first mentioned combinations of Tortas de Aceite with Manchego cheese in its report Spreading The World About Spanish Foods on April 24, 2013 .

Since June 6, 2013 the olive oil tortas "Tortas de Aceite de Castilleja de la Cuesta" are protected as a guaranteed traditional specialty (g. T. S., Spanish: Especialidad tradicional garantizada (ETG)). The main difference between these Tortas de Aceite is that they are made with invert sugar . When the original original Tortas de Aceite were made, no invert sugar (Spanish: Azucár invertida) was known.
