Trofie (also Trofiette ) are a pasta specialty of Ligurian cuisine .

Trofie are twisted noodles made from durum wheat semolina and water with pointed ends; the name goes back to the word strofissià , which comes from the Genoese dialect and refers to the scrubbing movement of the hands when shaping the pasta. They are particularly known in the Genoa region and were invented towards the end of the 18th century. Trofie are often served with pesto alla genovese , with potatoes, beans and pesto or with beef fillet tips .
