Vareniki ( Russian / Ukrainian вареники ; singular Varenik вареник ) is a dish of Slavic cuisine that is common throughout the territory of the former Soviet Union . It is traditionally associated with Ukrainian cuisine and is considered a national dish in Ukraine. It consists of filled, crescent-shaped dumplings that are cooked in salt water or (in some regions) on steam.

Wareniki are almost identical to some types of Polish pierogi . In some western Ukrainian areas the two names, Warenyky and Pyrohy , are used for the same dish. One of the most widespread types of pierogi in Poland, Pierogi ruskie (Russian pierogi ), refers in its name to the former eastern Polish and today's western Ukrainian areas. In the rest of Ukraine, similar to Russia, the terms pyrohy and pyrischki are used for cakes and baked dumplings but not for pasta dishes.

Compared to the pelmeni, which are also common in Eastern Europe, vareniki are usually larger and have a much wider selection of traditional fillings. In contrast to pelmeni, only pre-cooked meat is usually used for a meat filling, which is due to the size of the vareniki and the generally short cooking time of such dumplings.

The dough for Wareniki is made from wheat flour , water, salt and egg. Sometimes milk, whey or kefir are also used. Similar to Chinese dumplings (jasse), the dough is rolled out flat in a round shape and possibly cut into squares. The filling is placed in this and then they are folded.

There are many different fillings for vareniki known: mashed potatoes, cooked white cabbage or sauerkraut, cream cheese (quark), mushrooms, meat and others. Fruit or berries are used as sweet fillings.

Wareniki are traditionally eaten with butter and sour cream ( Smetana ), but also with honey or jam ( Warenje ). The hearty variant is fried pork belly ( Schkwarki ) with onions.

In the story by Nikolaj Gogol The Night Before Christmas from the Evenings in the Hamlet near Dikanka collection , Wareniki jumped out of the bowl by magic, dipped them into the sour cream and flown into the mouth of the witch master Patzjuk Schmerbauch. As a result of this scene, vareniki jumping into the mouth have become a symbol of gluttony and laziness in the Russian and Ukrainian-speaking regions.

In Ukrainian literature, vareniki appear as a symbol of national identity. In Stepan Rudanskyj's poem Vareniki-Vareniki (1858) , a Russian soldier asks a Ukrainian farmer to cook Vareniki for him. He can't remember the word Wareniki while the woman pretends not to understand him.
