Yakitori ( Japanese 焼 (き) 鳥 , literally: grilled poultry ) is the Japanese variant of grilled fish , meat and vegetable skewers.

Traditional yakitori consists exclusively of chicken pieces and vegetables, but in modern parlance it also includes any other type of meat, fish, seafood and vegetarian grilled food that is skewered on skewers ( kushi ) and grilled. Yakitori is usually served with salt or a spicy sauce, the basic ingredients of which are mirin , soy sauce and sugar. The sauce is applied to the skewered meat, which is grilled until tender. The meat is then served as a dip with the sauce .
