Yiya yiyi

The book Yiya yiyi ( Chinese  易牙 遗 意  - "lasting thoughts of Yiya") from the end of the Yuan Dynasty and the beginning of the Ming Dynasty was written by Han Yi ( 韩 奕 ). It comprises two volumes ( juan ) and is divided into eleven categories ( lei ).

The book is an important source on the history of Chinese food and drink culture.

The first book tells about fermentation processes, about drying meat and salting fish, and about vegetables; The second book reports on steaming processes, cooking processes, sweets and pastries, noodle soups, vegetarian dishes, fruits, various soups and dishes, and herbal and animal ingredients used for food and medicine.

In total, more than 150 different ingredients, beverages, snacks, sweets and dishes served with rice or alcoholic beverages are described, mainly specialties from the provinces of Jiangsu and Zhejiang .

The authenticity of the book has been controversial in the past.

An early print is included in the book series Yimen guangdu ( 夷 門 廣 牘  /  夷 门 广 牍 ) from the Wanli era of the Ming dynasty, a modern edition has appeared in the book series Zhongguo pengren guji congkan .
