The Zappes is the tap waiter in the Rhineland who pours the Kölsch or Alt from the barrel at the Köbes or in smaller pubs directly to guests.

The Köbes traditionally pays for beer with beer tokens that are placed on a wooden crate. The brewery pays the zappes an hourly wage, as they usually have no share in the tip. At the beginning of the 20th century the activity was often carried out by underage Zapp boys. The name is derived from Zappes for tap.
