Sugar egg

Sugar egg is a dessert that is prepared by whipping egg with sugar into a thick foam. Depending on the recipe, only the yolk or the whole egg is used. With alcohol, the sugar becomes eggnog , mixed with other spirits eggnog .

In the Baltic States , Poland , Russia , Belarus and Ukraine , sugar is known as Gogol-Mogol (or Kogiel-mogiel , Kogel-mogel , Gogel-Mogel - with many spellings, the origin of the name is not certain) - mostly in connection with strong coffee . But there are also many recipes based on fruit juices or milk. In Germany, the designation Gogglemoggel can also be found , which serves as the name for the character Humpty Dumpty in the German translation of Lewis Carroll's Alice in Wonderland .

In the 1950s, sugar was a cheaper alternative to pudding and a common tonic. It was given, partly mixed with red wine, because of its high protein content, for strengthening (blood formation) to sick or underweight children.

This dessert is no longer very common today, possibly due to the fear of salmonella in raw eggs.
