Sugar thermometer

from Wikipedia, the free encyclopedia

A sugar thermometer is used for the preparation of ice cream , desserts or for dishes made from chocolate or in confectionery . It is particularly important to monitor the temperature with a sugar thermometer if ingredients are used that change their consistency and structure in an undesirable way above a certain and usually higher temperature.

nature

A sugar thermometer is usually made of glass in a fireproof metal or plastic holder. Sugar thermometers based on the expansion thermometer are commercially available . It has a measuring range of approx. 40 ° C to 200 ° C appropriate for the preparation purpose. It is usually designed in such a way that it can be hung in a pot to monitor the temperature. Due to its measuring range and construction, it cannot be used universally and, like any other glass expansion thermometer, can be destroyed by improper use. Among other things, it is not suitable as a fat thermometer or roasting thermometer , as the possible temperatures above 200 ° C can destroy the sugar thermometer.
