Zunsheng bajian Yinzhuan fushi jian

The Chinese cuisine section Yinzhuan fushi jian ( Chinese  饮 馔 服食 Anmerkungen  - “Notes on Drinks and Food”) of the book Zunsheng bajian ( Chinese  遵 生 八 笺  - “Eight Treatises on Healthy Living”) contains for them Research into the eating and drinking culture of the Ming Dynasty is important material.

The Zunsheng bajian was written by Gao Lian (高 濂) from the Ming Dynasty. The work comprises a total of 19 booklets ( juan ). It is divided into eight sections.

The fifth section (11-13): Yinzhuan fushi jian

In the fifth section (Yinzhuan fushi jian 饮 馔 服食 笺) of the book, which relates to Chinese cuisine, reports on, among other things

  • Tea (cha 茶)
  • Water (shui 水)
  • vegetarian dishes (shucai 蔬菜)
  • Fermentation process (niangzao 酿造)
  • Manufacturing process for medicinal products (fazhi yaopin 法制 药品).

The author

Gao Lian was a yuefu poet and Southern Aria ( Nanqu ) composer who lived in Hangzhou during the Wanli era of the Ming Dynasty . His piece "The Jade Hairpin" ( Yuzan ji玉簪 记) is included in the well-known Ming period collection Liushi zhong qu (六十 种 曲), which was also published in 1935 by Kaiming shudian开明 书店.

Another important work on Chinese cuisine is his Jujia bibei ( Chinese  居家 必備  /  居家 必备 , Pinyin Jūjiā bìbèi  - "Essential Skills for the Household"), of which it is a print from the Jiajing (嘉靖) era of the Ming period gives.

Old prints and modern editions

The earliest print is from the Ming Dynasty 1591. The section Yinzhuan fushi jian (饮 馔 服食 笺) of the book Zunsheng bajian is contained in the Japanese collection Chugoku shokkei sosho and in the Chinese book series Zhongguo pengren guji congkan . A New Chinese translation by Zhang Zhengyi was published in 1993 ( ISBN 7219025017 ).
