Destemming

As stemming , Destemming or stemming refers to the detachment and removal of the berries by the rapping or grapes skeleton of the grapes . This is to prevent the tannins contained in the grape stalk and black horse from getting into the wine . The verb abbeeren refers to the grapevine, reb and destemmer come from the grapevine .

Destemming used to be done by hand; today so-called grape mills, destemming machines, grinder machines or entrappers are used. The grapes are conveyed through a perforated or lattice drum with a spiked roller. The berries fall through and the combs (black horses) are ejected at the end of the drum. The perforated drum can be mounted horizontally or vertically. The berries are squeezed using squeeze rollers underneath. The pressure of the rollers must be adjusted so that the vines are not crushed. The crushed berries make the mash, which is pressed in a press. If full berry pressing is planned, the rollers can be bypassed on the destemmer with deflector plates.

Modern grape harvesters only harvest the berries, making separate destemping unnecessary.
