Agaropectin

Agaropectin is a non- gelling polysaccharide made from β-1,4 and α-1-3 glycosidically linked D - galactose and 3,6- anhydro - L- galactose . About every tenth galactose residue is esterified at O-6 with sulfuric acid and contains additional sulfate residues. It also contains 1% uronic acids and pyruvate groups are bound to the D- galactose as 4,6 ketal . At 30%, it is an essential component of agar alongside agarose .
