Alpine milk

Almmilch or Alpmilch is a name for milk that is obtained in alpine farming .

Originally there was a logistical problem of milk processing in the Alpung. Transporting the fresh milk into the valley was not feasible. Wherever not only young cattle and drained dairy cows were raised, the dairy farming developed, i.e. cheese production directly on the alpine pasture, from which the various types of mountain / alpine / alpine cheese emerged. There was also the production of alpine hay, which could be brought down to the valley in winter, so that you could sometimes speak of alpine milk at the farm. This economy has largely died out.

Today most of the alpine pastures / Alps have access roads and are supplied with energy, which means that the cold chain can also be maintained from the mountain. Therefore the milk can be used for drinking milk as well as dairy products of all kinds. Nowadays, the designation is primarily used as a quality label in marketing, on the one hand because of the species and ingredients-rich food supply in the alpine vegetation , and on the other hand because of the healthy living conditions in the high mountains, including for livestock . Production is increasingly being promoted, in particular because of nature and landscape protection concerns, as well as in the context of greening agriculture and the preservation of the alpine region as a cultural asset , for example in the Alpine Convention (Protocol on Mountain Agriculture of 1991). Alpine milk is also generally considered organic milk because sprays or artificial fertilizers play no role in Alpine farming, and mostly also as GMO-free , because neither modified types of feed are grown nor fed with purchased energy feed. There are some statements about actual, fundamental biochemical differences to conventionally or in the lowlands and the valley milk produced, but no reliable knowledge.

Austria

In Austria, the name is protected and may only be used for dairy products that comply with both the Heumilch ARGE Heumilch hay milk regulation and the criteria of the ÖPUL alpine and boarding measures that meet the requirements of the Alpine Convention's Mountain Agriculture Protocol . This regulation  comes into force when the implementation regulation of the European Commission for the entry of the name "Heumilch" in the register of guaranteed traditional specialties (gTS) comes into force, and is monitored by Agrarmarkt Austria  (AMA) within the scope of the AMA seal of approval .

The designation may only be used for the milk actually produced on the Alm / Alpe and mainly plays a role in the various named or production according to protected alpine / alpine cheeses, in particular Tyrolean alpine cheese / Tyrolean alpine cheese  PDO. and Vorarlberger Alpkäse  PDO
