Anita Klemensen

Anita Klemensen (* 1977 in Copenhagen ) is a Danish cook. Together with Lars Thomsen , their restaurant Den Røde Cottage in Klampenborg was awarded one star by the Michelin Guide from 2012 until it closed in 2017 .

The Gule Cottage

Klemensen grew up in Thisted; her father, Peter Klemensen (* 1944), a master brewer , was employed by Thisted Bryggeri from 1981 . Her mother, Ingelise, is a farm economist. She has a sister named Gitte. She made her Abitur at Thisted Gymnasium . She then traveled to Australia and New Zealand. Before that, she was able to secure an apprenticeship at Søllerød Kro . However, she completed her training as a chef under Casper Vedel in 2002 on Zealand. She then worked at the Kommandanten restaurant and from 2003 to 2005 again as a dessert chef at Søllerød Kro . For the next five years she was the head chef in the 1st . at Herluf Trolles Gade 9 in Copenhagen, as successor to Mette Martinussens, before she took over the restaurants Den Røde Cottage and Den Gule Cottage in 2010 together with Lars Thomsen and Anders Wulff-Sørensen, their sous chefs in the 1st , of which the former was called “gourmet restaurant ”. In the 1st she got bored of the strict menu sequence for weeks, which is why she wanted to make something of her own. In Røde Cottage there was no strict menu sequence despite the greater amount of work. At first, Lars Thomsen was head chef at Røde Cottage and the bistro-like Gule Cottage Anders Wulff-Sørensen, while Klemensen was responsible for both and mainly took care of cakes and desserts, but now Wulff-Sørensen works in another restaurant.

The kitchen of the cottages is dedicated to the New Nordic cuisine and uses many ingredients from the forests in the area. She also used seasonal ingredients and served them in a natural state. Klemensen says: "[...] jed gider ikke en rødbede, der ligner et æble" ( [...] I can't stand it when a beetroot looks like an apple ). In addition, you should be able to bite your way through the meal, so that the consistency is as important as the taste.

Klemensen lives in Gentofte . She was the first Danish cook whose restaurant was awarded a Michelin star .

Together with her father, she was portrayed in detail in the book Thy til sanserne ( Thy for the senses ; ISBN 978-87-994217-0-1 ) published in 2010 . She also contributed various recipes to the book, while her father selected accompanying beers from the Thisted Bryghus range.

In 2013 she was a jury member at the annual Årets Kok cooking competition .

The reason for the cottages being closed was that she and Allan K. Petersen wanted to try something new. Economically, the restaurant would have been in good shape.
