Klemensen was the head chef on the 1st for five years before opening the restaurants Den Røde Cottage and Den Gule Cottage on May 17, 2010 together with Lars Thomsen and Anders Wulff-Sørensen, their sous chefs on the 1st , the former being called “ gourmet restaurant ”. At first, Lars Thomsen was head chef at Røde Cottage and the bistro-like Gule Cottage Anders Wulff-Sørensen, while Klemensen was responsible for both and mainly took care of cakes and desserts, but now Wulff-Sørensen works in another restaurant. The investor in the cottage restaurants was the owner of FC Nordsjællands Allan Kim Pedersen .

In the 1st th , Klemensen got bored with the strict menu sequence for weeks, which is why she wanted to make something of her own. In Røde Cottage there was no strict menu sequence despite the greater amount of work. The menu was changed every month.

The kitchen of the cottages was dedicated to the New Nordic cuisine and used many ingredients from the forests in the area. She also used seasonal ingredients and served them in a natural state. Klemensen says: "[...] jed gider ikke en rødbede, der ligner et æble" ( [...] I can't stand it when a beetroot looks like an apple ). In addition, you should be able to bite your way through the meal, so that the consistency is as important as the taste.

After closing on December 20, 2017, it was reopened on March 10, now under the direction of Simon Lerche.

The red painted building was designed by the architect Gottlieb Bindesbøll (1800-1856) in 1844, like the yellow one a few meters away . They were originally part of his project for Klampenborg Kur- og Søbadeanstalt . These cottages were intended as holiday apartments for bathers and, with the exception of the red half-timbered buildings. In Den Røde Cottage is contrast to the former kitchen building. In 1937, after the old health resort had become Bellevue Strandbad , the brick building came into state ownership and was initially used as a shelter for forest workers.

In 1979 it was listed as a work by Bindesbøll, who was also the architect of the Thorvaldsens Museum in Copenhagen. It has been operated as a restaurant since 1996.
