Pear honey , also known as pear cabbage , pear syrup , pear concentrate or pear concentrate , is an opaque , thick, brown to black-brown, thickened fruit juice made from pears - sometimes apples are also used for this - that occurs mainly in Central Switzerland . During World War II, pear honey milk was an alternative to milk coffee because of the shortage of coffee beans. Before sugar became widespread, pear honey was fed to bees as a sugar food in certain regions .
