Blue St. Galler is the name of a newly bred potato variety from Switzerland. It was created by crossing the Blue Sweden with the Swiss early potato Prättigau , named after the Prättigau valley in the canton of Graubünden . Breeder Christoph Gämperli works in Flawil , Canton St. Gallen , hence the name St. Galler .

This new breed has white flowers, a long oval bulb shape and a dark blue shell. This potato variety ripens medium early (harvest from August). The flesh is blue-violet. The color comes from the plant pigment anthocyanin it contains . Blue St. Gallers are predominantly waxy. The meat is hardly discolored, neither during cooking nor during deep-frying (<160 ° C), which is what distinguishes this variety.

Because of the approval, potatoes of this new variety were tested in Holland and Canada . This variety is the only Swiss variety listed on the official list of varieties. The trademark is registered.

The Swiss wholesalers Migros and Coop (Switzerland) sell blue St. Galler as a specialty. Blue potato chips in particular are on offer. This type of potato is also offered in Germany and Austria.
