Blue Swede
Blue Swede (also Blue Congo or Idaho Blue ) is the name of an old potato variety . The potato has blue-purple flowers and purple flesh. The color changes to blue when cooked. It ripens in August, is between floury and waxy and has an intense, slightly sweet taste.
The Blue Swede was named Potato of the Year 2006.
