Cahill's Irish Porter Cheddar
Cahill's Irish Porter Cheddar is a type of cheese made by Cahill’s Farm Cheeses in Ireland and is sold internationally. It is a cheddar flavored with porter beer . The black markings on the cheese caused by the beer are striking. Occasionally this cheese is also offered as " Guinness cheese" . Cahill's Irish Porter Cheddar is made on Dave and Marion Cahill's farm in Newcastle West , County Limerick . It was developed in-house by the farm and has been on the market since the early 1980s.
The starting point is pasteurized milk , in which by vegetarian rennet the fraction of the whey is separated. The cheese mass is handcrafted with a mass of porter beer , which is produced in the in-house brewery, and thus receives the characteristic structure of yellow cheese chunks in a dark brown texture. The cheese wheel is wrapped in a brown wax shell. It is available in 190 gram and 5 lb loaves .
The cheese is easily brittle and is therefore not offered in slices. It can be rubbed and melted easily. The smell is described as typical cheddar and butter-like. In the taste there should be a caramel-like and malty note.
