Crottin de Chavignol

The Crottin de Chavignol or just Chavignol is a French soft cheese made from goat's milk that has to be stored for at least 10 days in order to achieve its characteristic compact, firm and crumbly consistency and its subtle but characteristic goat aroma of nuttiness and slightly sourness. It contains at least 45% fat in dry matter.

Its area of ​​origin includes the Sancerrois , the so-called Pays Fort , the Champagne Berrichonne and neighboring areas. The largest area is in the Cher department , in which the hamlet of Chavignol is also located. The Loiret and Nièvre departments have smaller shares .

The Crottin de Chavignol has been protected as an Appellation d'Origine Contrôlée (AOC) since 1976 .

The name "Crottin" (French crottin de cheval = horse apple) is derived from the appearance of the ripe cheese.
