Chawanmushi ( Japanese 茶碗 蒸 し , dt. "Tea bowl steamed") is a Japanese variant of egg custard that is usually eaten as a starter.

The basis for this steamed egg dish is an egg mixture seasoned with soy sauce , dashi (broth), fish flakes and mirin (sweet rice wine), which is whisked. As a rule, chicken eggs are used. Before steaming in a mug or bowl, pieces of chicken breast or prawns or shrimp as well as mushrooms and parsley are added to the egg mixture .

The finished egg custard is usually eaten with spoons in Japan. The dish can be eaten warm or cold. As a cold dish, it is also known as tamago tofu . If udon noodles are added, the dish is called Odamaki mushi or Odamaki udon .
