The Chevrotin is a French semi-hard cheese . Its origins lie in the historic Savoy landscape in the Auvergne-Rhône-Alpes region . In addition to the Chevrotin, the Reblochon is also produced in the Savoy Alps . In addition to his family coat of arms , which is stamped on the bark, he has also had the AOC seal since May 2002 .

Chevrotin has a reddish-brown rind and a smooth, white-yellow paste . The cheese has a flat, cylindrical shape with a diameter of 9 to 12 centimeters and a height of 3 to 4.5 centimeters. It weighs between 250 and 350 grams.

Since the 17th century, only raw milk from goats that graze on the steep, herbaceous mountain slopes of the Savoie in summer and hay in winter has been used for the Chevrotin . The main breed of goat in this region is the Alpine goat . Translated, the cheese means “little goat”. Experts also refer to it as the "little brother" of the Reblochon .

Chevrotin cheese is still made by hand at all stages of production. It matures on spruce wood for at least three weeks , where it is turned over and washed off with brine three times a week .

The Chevrotin has a full-bodied taste combined with an aromatic acidity that is reminiscent of wild herbs . Its fat content is 45% fat i. Tr.

The Chevrotin is ideal for breakfast rolls, but also goes well with other cheeses on a cheese platter after a menu .
