Coddle ( Irish cadal ) is a traditional Irish dish and is a type of stew made with bacon , sausage and potatoes . Everything is cooked in a saucepan. You can simply refine this basic recipe with garlic , bay leaf or other fresh herbs.

Irish stew was originally considered the Irish national dish , but since it is often referred to as “poor people's food”, coddle is now very popular.
