A flan is a mass of eggs and liquid thickened in a water bath . A distinction is made between the classic sweet flan (made from egg, milk and sugar) and the savory flan (here salt is used instead of sugar and broth or pureed vegetables instead of milk ).

Sweet flan is a common dessert in Portugal , Spain, and Latin America . A well-known variation of French cuisine is the crème caramel .

Sweet flan

For the preparation of the flan, eggs are mixed with sugar until the sugar has dissolved and a creamy, but not frothy, mass is formed. The egg cream is mixed with hot milk and cooked in a hot water bath for about 60 minutes in portion molds that have been previously poured out with caramelized sugar. During this process , the cream stiffens into a relatively stable pudding mixture because of the proteins contained in the egg . The flan is then cooled and tipped out of the mold to serve. The then liquid caramel flows around the flan like a mirror.

In France, the flan is also known as a cake with a base made of shortcrust pastry , the so-called flan pâtissier .

In Venezuela, and therefore also on the Canary Islands, the very similar dish Quesillo is prepared, using sweetened condensed milk instead of milk and sugar. In addition, the finished dish is riddled with small holes (like some types of cheese), which led to its name.

In Lower Carinthia, the dish Oamüch (egg milk) with a recipe very similar to that of flan was common.

Leche asada (baked milk) is a specialty of the Canary Islands . In contrast to the flan, which is thickened in a water bath, this dessert is baked in the oven for around 30 minutes.

As with the sweet flan, the essential ingredients are milk, eggs and sugar; Most of the recipes also mention lemon peel, cinnamon, salt, and some also use vanilla. The ground biscuits (or rusks) mentioned in some recipes may be a substitute for gofio that was originally used . Goat milk is used on La Gomera ; an important addition is palm honey .

Numerous recipe variations of this dessert are also known in South America ( Bolivia , Chile , Peru ).
