Curry paste
Under curry paste ( Thai : เครื่องแกง - Krueang Kaeng ) is a range of Thai understands Dips based on herbs and spices. The curry paste is a typical ingredient of Thai cuisine and a basic ingredient for some dishes from the "Gaeng" group, commonly referred to as " curry ". The pastes are also most common outside of Thailand in Laos , Indonesia , Malaysia and Vietnamused. There are different types of pastes, which differ in their composition. In Thailand, these pastes are usually freshly prepared in private households before they are processed.

- Red curry paste for Kaeng Phet - hot paste made from red Thai chilli (so-called "mouse droppings chilli", Thai: พริก ขี้หนู - Phrik Khi Nu), shallots ( หัว หอม - Hua-Hom), garlic ( กระเทียม - Kratiam), galanga root ( ข่า - Kha), lemongrass ( ตะไคร้ - Ta-Khrai), coriander root ( ราก ผักชี - Rak Phak Chi), shrimp paste ( กะปิ - Kapi), roasted cumin seeds ( ยี่หร่า - Yi-Ra) and green peppercorns ( พริกไทย อ่อน - Phrik-Thai -On).
