Daftmill is a whiskey distillery in Cupar , Fife , Scotland . The distillery was founded in 2005 by the brothers Francis & Ian Cuthbert, who run the distillery as a sideline on their farm.

Surname

Daftmill means crazy mill. The stream flowing past the farm gives the impression of flowing up the mountain and was therefore given the name "Daft Burn" (crazy stream) by the locals. When the mill was built on the site of the farm, it got its name from the brook: "Daft Mill"

history

The founding family has lived on the farm for 6 generations, but the family didn't come into possession of the property until 1984. The distillery was founded in 2005 as one of the newest but also smallest distilleries in Scotland. Today it is one of the few distilleries located in the Lowlands . Besides Daftmill, there were only 3 other producing distilleries in the Lowlands at the time of its founding: Auchentoshan , Bladnoch and Glenkinchie . The first whiskey was distilled on December 18, 2005. The buildings of the farm distillery are over 200 years old and originally housed an oat mill, among other things, which has been out of operation for a long time - the millstones were removed in the 1940s and the mill was no longer active for a long time .

production

The distillery building is located in an old stone farm building that used to house a mill. With the exception of the stills made in Rothes and the mash tun (mash-tun), all other parts of the distillery were made by craftsmen from the region who are located within a radius of less than 10 km from the former farm building.

The water for whiskey production comes from a private spring on the farm. In the mashing process, 1 ton of mash is processed in the Mash Tun, with 4,000 liters of first water and 2,000 liters of second water. Fermentation takes an unusually long time for Scottish distilleries, between 96 and 104 hours. The wash back holds approx. 5,000 l and thus makes 2 fillings for the wash still.

The wash still has a volume of 2,500 l, the spirit still of 1,500 l.

Various pre-loaded barrels are used for storage. In addition to sherry and bourbon barrels, parts of the production from 2008 are stored in rum barrels.

In May 2018, the distillery's first 639 bottles were released (inaugural release); the three barrels selected for this purpose (05/02, 05/03 and 05/07) were distilled in 2005 and bottled at cask strength (with 55.8% alcohol) in spring 2018.

Sightseeing

As a farm distillery, Daftmill does not have a visitor center and cannot be visited regularly. However, you can make appointments to visit.
