Doppio Passo
The name Doppio Passo stands for a special type of winemaking in Italy . A Doppio Passo only contains the Primitivo grape variety . He comes from Apulia in southeast Italy. The dry, very warm climate and the soil give the wine body and character.

The Doppio Passo is made from ripe, mostly hand-picked grapes of the Primitivo grape variety in a traditional production process. In a first step, the wine is traditionally vinified on the grape skins . A second fermentation on the skins of the berries then takes place with additional grapes. They will be read overripe at a later date. With this "double course" (ital. Doppio passo) the wine removes aroma and color from the skins again.

Other special production processes for Italian wines are the Ripasso method in the Veneto region and Amarone della Valpolicella or simply Amarone from the Valpolicella area in the Veneto region .
