Egg dumplings , also known as egg dumplings , are a simple Austrian pan dish made of dumplings and eggs that comes from Viennese cuisine .

Mixed eggs (and milk, if necessary) are seasoned with salt, pepper and possibly a little nutmeg and poured over the dumplings, which have been lightly heated in the pancake with lard or butter after cooking. Wait until a slightly brown layer of egg has formed on the bottom of the pan, scrape it off and repeat this until all of the egg white has coagulated . Egg dumplings are often garnished with chives and served with a green salad .

According to a survey carried out by the daily Heute newspaper in 2010, egg dumplings are among the ten most popular main courses among Austrians.

Trivia

Egg dumplings with green salad are considered Adolf Hitler's favorite dish . In this regard, there was also a complaint against the canteen of the police barracks in Vienna's Moroccan Alley, because it had offered this dish as a lunch menu on April 20, on Hitler's birthday.
