Escabeche (via Arabic sikbāǧ from Persian sekbā , "sour food") is a traditional dish of Iberian , South American and North African cuisine.

Fish is rolled in flour and fried in oil in a marinade inserted of oil, vinegar, water, onion, garlic, bay leaf, carrots, peppers and spices and at least 24 hours stained . The method of preparation is very similar to that of German (marinated) fried herring . It can be served cold, but also boiled again as a stew with bread. In Jamaica as " escovitch ", in Italy as " escabecio ", " scapece " or " savoro ", in Greece as " savoro " and in North Africa as " scabetche ".

Also called Escabeche, a dish made from chicken, onions and spices is served in Belize. Here, too, one ingredient is marinated beforehand, namely the onions.
