fried herring
Herrings are a dish of German cuisine from fried and then marinated herring .
Preparation and shelf life
For preparation, gutted and scaly green (fresh) herrings are seasoned, floured , fried in oil and then placed in a briefly boiled marinade made from vinegar , water, sugar, onion rings , bay leaves and spices (e.g. mustard and peppercorns ) for a few days .
By placing it in the sour marinade , the thin bones of the green herring partially dissolve, so that they hardly interfere with consumption.
Unpreserved fried herring can be kept refrigerated for up to two weeks. They are also available ready-made as convenience food , especially in tins .

Fried herring is served cold with bread , fried potatoes , mashed potatoes or jacket potatoes .
