Escamoles  [ eska'moles ] (nahuatl: azcamolli, from azcatl (ant) and molli (stew)) are larvae and pupae of ants of the species Liometopum apiculatum and L. occidentale var. Luctuosum used as food insects . Please click to listen!Play

They are harvested from the roots of the agave species Agave tequilana (grown for tequila ) and Agave americana (grown for Maguey- Mezcal ) in Mexico . Escamoles taste like butter or nutty, and have the consistency of cottage cheese.

Escamoles are popular as a food in and around Mexico City . They were already used as food by the Aztecs in Mexico .
