The succulent Euphorbia gillettii grows from fleshy, thick roots with very dense shoots that branch out from the base and reaches a height of 20 centimeters. The sharp, square and overhanging shoots are up to 30 centimeters long and 1.5 centimeters thick. On the edge of the shoot there are protruding teeth 2 centimeters apart. The elongated triangular thorn shields are up to 7 millimeters in size and stand individually. Thorns up to 13 millimeters in length and secondary leaf thorns up to 1.25 millimeters in length are formed.

The inflorescence consists of almost sessile and single, simple cymen . The cyathia reach 5 millimeters in diameter and the rectangular and yellow-colored nectar glands touch each other. The bluntly lobed and almost sessile fruit is slightly purple in color and is 3.5 millimeters long and 4 millimeters wide. The egg-shaped seed is slightly wrinkled and becomes 2.5 millimeters long and 1.5 millimeters wide.
