Fillet (fruit)

A fruit fillet or fillet for short is mostly processed, peeled and portioned parts of a citrus fruit that are used for food and drinks . This is also the name given to blanks of the pulp of exotic fruits such as mango , pineapple and papaya .

Citrus fruits are mostly used for fruit fillets. In preparation, remove all layers of the pericarp . In order to remove the thin-walled endocarp as well as the exocarp and mesocarp , the fruits are usually peeled with a knife or machined. The pulp, which is now accessible, is divided into segments by highly cellulose-containing fruit skins. The pulp is loosened along the skin and the fruit fillets are obtained.

The aim of this preparatory and processing activity is to separate inedible, poorly digestible or poorly aromatic fruit parts from those parts which are generally used as pulp in food production. Occasionally the removed portions are used for the production of candied fruits or for the extraction of flavors and aromatics .
