Fruit ether is a chemically incorrect name for fruit flavors that are esters of short or medium-chain fatty acids with short-chain alkanols (alcohols). These are important as flavor and odor substances of natural fruits. Synthetically produced fruit ethers mainly contain fatty acid ethyl and amyl esters in a mixture with methyl and ethyl esters of benzoic acid , salicylic acid and sebacic acid .

The fruit ethers are often used as alcoholic solutions (fruit essence) to flavor foods ( ice cream , confectionery , pudding, etc.).
