Fermentation vat refers to a vessel used for fermentation in beer brewing , wine or spirits production. It can be made of different materials. Usually stainless steel , steel and other metals (e.g. aluminum ), plastic , stoneware , glass , concrete or wood are used here. Some of these containers are lined on the inside with other materials, such as glass enamel , plastic, stoneware or glass. To dissipate the heat generated during fermentation, fermentation tanks are also equipped with cooling systems. Fermentation tanks can be equipped with additional monitoring devices such as sight glasses , thermometers , test taps or stirring devices in order to monitor the fermentation process and to initiate countermeasures at an early stage in the event of undesirable developments.

Particular demands on the containers used for fermentation consist primarily in their resistance to fruit acids , sulfur dioxide and alcohol . Some materials also influence the taste and smell of their content more than others.

Although stainless steel has been available since 1912, for a long time it was used very rarely due to its high cost. Today, however, due to its excellent suitability, it is increasingly displacing the other manufacturing materials.
