from Wikipedia, the free encyclopedia

Gastronomy specialist in Austria is the official designation for a recognized occupation or apprenticeship in the hospitality industry . Gastronomy professionals are trained and deployable both in the kitchen and in service. As a result, work and training differ significantly from the only two-year training course as a specialist in the hospitality industry in Germany.

job profile

The locations of catering professionals are wide-ranging, they work in pubs, restaurants, cafés, bars, hotels or at catering companies. Depending on the type and size of the business, they work together with specialists and assistants, e.g. B. with restaurant professionals , cooks , hotel and hospitality assistants and kitchen assistants. In the kitchen area, they are responsible for preparing a wide variety of dishes. In the service area, they work primarily in the guest rooms or gardens of gastronomic establishments. Other tasks include creating menus and drinks, decorating the tables, receiving and serving guests, as well as cashier and billing activities. In the case of independent professional activities , organizational or purchasing activities are in the foreground.

education

In Austria, apprentices are trained for four years in the dual system at vocational schools and in catering companies. The training content corresponds to the activities of the job description. In this way, apprentices acquire theoretical and practical knowledge and skills about the hospitality industry, which they use to take the final apprenticeship examination at the end of their training . A passed exam also replaces the apprenticeship qualification as a restaurant specialist and cook . Qualifications in so-called related apprenticeships, such as system catering specialist or pastry chef, can be achieved with a shorter apprenticeship period. Many institutions offer further training courses - for example to become a “Food & Beverage Manager” or a banquet manager .

For access to higher qualifications at colleges, technical colleges and universities, you usually need the vocational matura (vocational maturity examination), which consists of the final apprenticeship examination and four other exams. Training to become a foreman for food technology is also offered.
